Tripe Soup at the Service Area: Thoughts about an Infrastructure of Meaningful Sociality

Abstrakt

In this paper, I argue for understanding service areas along transport corridors as places where people encounter experiences of intersectional oppression and dominance. In doing so, I argue, rest stops generate a kind of ‘meaningful sociality’. To make my point, I draw on history and adaptation, as well as observation of the preparation and serving of 'Shkembeto', or tripe soup. Indeed, the soup, which is famous in Turkey and Bulgaria, offers disorienting sensory experiences for some, associated with complex power relations, making the service area a site for reflection on discrimination and gender roles. This paper draws on ethnographic fieldwork (participant observation) carried out for several months at a Bulgarian service area. The paper closes with reflections on the actual sociality of places like rest stops, which are ephemeral but meaningful on the spot and at home.
